I’ve been super busy and slacking on keeping you guys up to date on my meal prep! I’m sorry guys!
I’ve made plenty of boiled eggs this week but for my breakfast I made berry protein pancake bites. They’re delicious, probably because I LOVE pancakes and always want them. As you can see I made them late Tuesday night. But here is the recipe:
I use Kodiak power cakes pancake mix.
One cup of pancake mix
One cup of fair life non fat milk
A handful of blueberries
And two strawberries sliced
I mixed it all together and put it in a muffin tin with muffin liners. I baked them at 350 for 15minutes!
You can dip these bad boys in syrup if you like or eat them plain 🥞 🙂
They’re a great on the go source of protein for breakfast or a snack!
I love meatloaf but I stopped eating red meat almost 3 years ago. I still love meatloaf however so I’ve made it with ground turkey instead. Here is one of my favorite recipes and one of the easiest for meal prep.
2 eggs slightly beaten
1 cup of shredded zucchini (be sure to drain the excess water that come from shredding or grating the zucchini)
1/2 cup of Italian bread crumbs (I use Panko)
1/2 cup of chopped onion (I’m not a big onion fan so I use 1/4 a cup)
1 teaspoon of sea salt
1/2 teaspoon of dried oregano leaves
1/4 teaspoon of pepper (I love pepper so I use 1/2 teaspoon)
1 pound of ground lean turkey
Optional : I love peppers and garlic so I add them.
1/2 teaspoon of minced garlic
1/2 cup of diced bell peppers (your choice of color, this time I used orange bell pepper)
Pre heat your oven to 350.
Mix together all ingredients into a bowl.
I use a muffin tin to cook it so that I have the perfect serving size. I grease the muffin tin with olive oil.
Once everything is mixed take handfuls of the mixture and put it in the muffin tin. Bake at 350 for 60 minutes. I like to remove the the meatloaf at the 50 minute mark and brush the tops with ketchup and the return them to bake for 10 minutes.
